Notes From Origin Some of the highest quality Colombian coffee is grown in the southwestern part of the country, near the Pacific Ocean, in the Popayán region of Colombia. The mountains in this area are known as the Cordillera Oriental, a part of the Sierra Nevada range. Moving in their grandeur, these mountains also produce coffee famous for its deep berry notes. This quality is due in part to the high altitudes, as well as the way the coffee is processed. Nearly all Colombian coffee is processed using the wet method, which enhances the coffee’s acidity, and thus its flavor.
